As I have mentioned before, I LOVE making freezer meals! Some people pick one day a week or month to make a ton of freezer meals to last the week or month, but my system is a little different. My grandma had a saying “A step in time saves nine” which basically means, to do something while you’re already doing things is faster than to have to set aside specific time. So what I do is every time I make any type of casserole, lasagna, etc. I will make 2-5 times more than we need that day and freeze the extra! It doesn’t take any more time, and the ingredients are already being prepared anyway- just throw in 2 lbs of meat instead of 1 etc. This system works for me! I always have meals in my freezer for a easy dinner if the kitchen is a mess and I don’t want to cook in it, those crazy days when there’s just no time, if I’m not home and my hubby needs to make dinner for the kids, or just for a sick/laid back day. They’re also great because it’s a healthy alternative for dinner- instead of turning to fast food or processed freezer meals. You’ve made these and know what’s in them!
The containers I get are from Smart & Final. They are heavy aluminium with a lid that is white on one side and silver on the other. (so you can put the whole thing right from the freezer to your oven) This also makes for easy clean up- after we eat I can throw away the pan! This is also really handy if you’re moving, or traveling- I bet you could cook these in a motor home oven!
My freezer meals usually take about an hour to an hour and a half to bake straight from the freezer. If you are wanting a faster freezer meal, Tupperware makes a product called a Vent & Serve that are specifically made to go from your freezer to the microwave. They’re great for kids, or work lunches. Tupperware even came out recently with one that is divided and reminds me of a TV dinner style.

The only recipe we’ve found that doesn’t freeze well is my Chicken & Rice casserole…. it tends to be too mushy for some reason…. I might try freezing it with the rice undercooked and see.
