Stuffed Cabbage rolls

After seeing a video on facebook of these looking so amazing it was time to try it out! The stuffed cabbage rolls I made were my own recipe a little different from the one in the video, but it still turned out amazing. Here’s the recipe-
Cute the core part out of a roll of cabbage and place it in a big pot of boiling water until the leaves come off easily.  As the leaves come off place them in a bowl of ice water.

While your pot is coming to a boil start making the stuffing.

Cook 1 cup of rice in 1 cup of water.  Once the water is boiling well, turn off the heat and let the rice absorb the water and finish cooking on it’s own.

In a frying pan cook 1/2 of a large onion in 2T of olive oil until the onion is clear.

In a mixing bowl place:

2 eggs
1 lb of ground beef
1 t. nutmeg
3 T of bread crumbs
cooked rice & onion

Mix all together.  Take each leaf of cabbage and cut out the stem part, then fill with a scoop of the filling and roll up.
Place the filled cabbage rolls in a large skillet that has a lid.

Pour 1 can of stewed tomatoes and 1 can of chicken stock over the cabbage rolls, cover with the lid and cook for 30 minutes on high.

    I love cabbage rolls! Most of them call for ground pork, which I never have, so this one looks like a recipe I can do! Anything with stewed tomatoes is always better in my opinion than with just diced tomatoes! I'm excited to try this one!
