I recently hosted a Pampered Chef party where we made these delicious Strawberry Amaretto. The original recipe called for Almonds and Almond extract, but since we have nut allergies here is my version of the recipe-
Cut up one sheet of frozen puff pastry dough. Spread them out on a cookie sheet. Mix together 1/4 c. coconut, and 1 T sugar. Sprinkle on top of the pastry dough and press in.
Bake at 350 for 18 minutes or until golden.
Cut each square in half thickness wise (like a sandwich)
Next make a filling:
1 c. sour cream
1 tub cool whip
1 t. coconut extract
1/2 powdered sugar
spoon into each pastry square
Top each with sliced strawberries, sprinkle coconut and then zest an orange on top.
