Peanut Butter Bars


Every once in awhile I get a craving for these tasty peanut butter bars.  Since they contain oatmeal I feel a little less guilty about eating them- because that makes them healthy right?  They are similar to the kinds served in school cafeterias, however I think these are better.  Here’s the recipe-

I got this recipe from a friend years and years ago and of course like I always do adapted it a little.  You can find this recipe along with lots of others from this blog and yet to be on here in my Family Cookbook

Cookie
Base

1 cup real butter (2 sticks) at room temperature
1 cup granulated sugar
2 cups brown sugar
1
  1/2 cups peanut butter (chunky or smooth)
3 eggs
2 teaspoons vanilla
1 1/2 teaspoons baking soda
1/2 teaspoons table salt
3 cups all purpose flour
3 cups quick oats
Fudge Frosting
4 cups powdered sugar
1/2 cup cocoa powder
1/4 teaspoon table salt
1/3 cup butter, softened
1/3 cup boiling water
1 teaspoon vanilla extract
Mix Cookie base ingredients
together, spread on a cookie sheet and bake at 350 for 10-12 minutes. Make
frosting while baking; spread frosting on cookie base while hot. (if it doesn’t
spread easily you can glop it on then place all back in the warm oven for a
minute and then the frosting will spread easily)

*Variation- you can drizzle about ¾ c. melted peanut butter on top of the cookie
base before adding the frosting.
