Low Altitude Brownies

As a brownie-aholic you can imagine how distressed I was to find out that my Best Brownie recipe wouldn’t turn out ever since we moved to a lower elevation! For the past 2 years I have been on the hunt for a recipe that will work here and turn out the most amazing brownies I was used to.  Finally I tried a recipe from my sister- that oddly enough when I made it at higher elevation was just okay, but making them here they turn out amazing!
You can always add things to this recipe to make different varieties, such as frosting (flavored how you like it- chocolate, mint, cream cheese etc) or add things to the brownie batter itself such as nuts, caramel bits, chocolate chips, etc.  Today’s batch I sprinkled Andes mint chips on top right after taking it out of the oven, then let them melt a bit and smoothed them over the top.

Here’s the recipe:

1 1/2 c. butter (3 cubes)- soft
3 c. sugar
cream these two together then add the eggs one at a time-
6 eggs
2 t. vanilla
2 3/4 c. flour (the original recipe called for 3c. but I found at this elevation I need to cut back on flour a bit and my recipes will turn out better)
1 t. salt
3/4 c. cocoa powder

Bake at 350 for about 30 minutes. (it usually takes about 25 mins for my oven)
