Last year when I was at Disneyland for Jubilee we got a bag of this gourmet caramel popcorn…… oh my holy deliciousness! It was crunchy caramel popcorn that had been drizzled with chocolate. It was sooooo good! I rationed it out for a month after coming home. We made it for last Christmas and I thought I had posted it on here but doing a search for it- guess not, so here it is!
First you pop some popcorn. I use my air popper so there’s less seeds and you don’t need the butter or salt.
Turn the oven on to 250
In a pan melt 2 cubes (1 cup) of butter
Add 2 c. brown sugar, 1/2 c. karyo syrup (corn syrup), and 1 t. salt
Bring to a boil stirring constantly. Then let it boil for 4 minutes without being stirred.
Remove from heat then add 1/2 t. baking soda and 1 t. vanilla.
Pour over popcorn and stir well making sure all the popcorn gets a good coating.
Spread the popcorn out on a cookie sheet. Bake for 1 hour making sure to stir the popcorn every 15 minutes.
At this point you are done with basic caramel popcorn. If you want to kick it up a tasty notch then it’s time to add CHOCOLATE!!
I used ghirardelli chocolate chips, but you can use what ever kind of chocolate you like. Melt the chocolate in a bowl in the microwave cooking for 30 second increments and then stirring so the chocolate doesn’t burn. Once the chocolate is melted drizzle it over the popcorn while it’s still on the cookie sheet.
Place the pan into the freezer to set up, then you can bag it up into gift bags, place in your serving bowls or eat away!
